Easy, tasty and plays well with others. This dinner-time staple is a cinch to whip up with ingredients you already have. Pair with pasta, veggies or on a sandwich. It’s too good to miss.
Ingredients:
Boneless, skinless chicken breast
1 cup panko breadcrumbs
1 egg
1/2 cup flour
Salt
Pepper
Olive Oil
Fresh parmesan
Directions:
- Place chicken between two pieces of wax paper. Use a heavy pan or mallet to pound the chicken until it’s very thin.
- Set up three bowls or plates. Put breadcrumbs in one; whisked egg in the second; flour in the third.
- Salt and pepper both sides of the chicken breasts.
- Cover the chicken completely in flour. Shake off the excess.
- Dip chicken into the egg mixture.
- Finally, cover each chicken breast with breadcrumbs.
- Heat up the olive oil in a medium pan on medium to high heat.
- Cook the chicken until done. Normally 6-8 minutes per side.
Sprinkle with parmesan on top and serve with your favorite vegetable or pasta.
