This dish makes me think of childhood. While no one had a chance to get my Grandma Rafaela to write down the exact recipe, I’ve done my best to recreate it for you. There aren’t any real measurements. So cook everything to taste.
Ingredients:
1 box fideo
1 small canned tomato sauce or half can of diced tomatoes
1 can chicken stock
Onion
Garlic
Salt
Pepper
Olive Oil
Directions:
- Heat olive oil in a large pot or paella pan.
- Large dice half an onion. I prefer white but yellow would work too.
- Rough chop 2 cloves of fresh garlic.
- Sauté the onions and garlic for about 3-4 minutes. Add the fideo and brown. Stir occasionally.
- Add in the chicken stock and tomatoes/sauce. Add salt and pepper to taste.
- Bring to a simmer and cover. Let cook for 10 minutes until all of the liquid has been absorbed.
Perfect with tacos, tamales, fajitas and more.
