Roasted Rosemary Garlic Potatoes

Another family favorite. This time coming from my Uncle Butch, the unofficial head chef of the family. This side is crucial to any proper Sunday Family Breakfast.

Ingredients:

2 large potatoes
Onion – preferably yellow or red
Olive oil
Salt
Pepper
Rosemary garlic seasoning

Directions:

1. Preheat the oven to 450°.
2. Large dice the potatoes and half the onion.
3. Place on a baking sheet. Drizzle olive oil liberally and sprinkle salt, pepper and rosemary garlic season all over. I like a lot of seasoning, but add to taste.
4. Toss to combine. Spread everything flat on the sheet.
5. Bake for 20 minutes or until potatoes are golden.

To reheat leftovers, just warm them up on a pan with a little olive oil. Chopped into bite sizes and these are great when added to quesadillas!
