Another family favorite. This time coming from my Uncle Butch, the unofficial head chef of the family. This side is crucial to any proper Sunday Family Breakfast.
Ingredients:
2 large potatoes
Onion – preferably yellow or red
Olive oil
Salt
Pepper
Rosemary garlic seasoning
Directions:
- Preheat the oven to 450°.
- Large dice the potatoes and half the onion.
- Place on a baking sheet. Drizzle olive oil liberally and sprinkle salt, pepper and rosemary garlic season all over. I like a lot of seasoning, but add to taste.
- Toss to combine. Spread everything flat on the sheet.
- Bake for 20 minutes or until potatoes are golden.
To reheat leftovers, just warm them up on a pan with a little olive oil. Chopped into bite sizes and these are great when added to quesadillas!
